ingredients 6 servings
2-1/2 pound chicken breast, cubed 5 red potatoes, halved
2 carrots in 2" pieces 1 large onion cut in 8 pieces
4 garlic cloves, crushed 1/4 cup water
1/2 cup soy sauce 2 tablespoons white sugar
3 tablespoons hot pepper paste 2 cups rice, uncooked

  1. ensure rice is ready when main dish is done
  2. in a large pot over medium heat, mix the chicken, potatoes, carrots, onion, sugar, and garlic
  3. pour in water and soy saucee
  4. stir in sugar and hot pepper pastee
  5. bring to a boil, reduce heat to low, and simmer 45 minutes, until chicken juices run clear, vegetables are tender, and liquid has thickenedd
  6. serve on or with cooked rice

Notes - The hot pepper paste comes in a red container that you can see in the ingredients picture.  You can find it at your local Asian market and the text on it is "Taeyangcho Gold Gochujang (Hot Pepper Paste-Hot)."
