ingredients yields about 4 cups 
2 pounds roma tomatoes, blackened virgin olive oil
4 teaspoons finely minced roasted garlic 1/2 onion, chopped
4 chipotle chiles en abodo, chopped 1/2 cup minced fresh cilantro leaves
1 tablespoon salt 1/4 cup red wine vinegar
1 teaspoon sugar  

  1. start the grill!
  2. quarter tomatoes then blacken on grill
  3. heat 1 tablespoon of olive oil on medium until lightly smoking, add onions until carmelized (10ish minutes)
  4. add onion, half of the tomatoes and the garlic to blender
  5. pulse until chopped but not pureed, add cilantro and chiles, pulse again to mix
  6. remove cores and seeds from remaining tomatoes, roughly chop, mix in a bowl with other half, 1/4 cup olive oil, vinegar, salt and sugar

Notes - Feel free to roast whole garlic on the grill as well then chop it up.   Chipotle Chiles en Abodo is a canned product by the way and one can should have 15-20 of them in it.
