ingredients 12-15 servings
2 cups cornmeal 1-1/2 teaspoons salt
2/3 cup all-purpose flour 1 teaspoon baking soda
1/4 cup sugar 4 eggs, lightly beaten
4 teaspooons baking powder 2 cups milk
1 cup vegetable oil 2 cans (15-1/4 ounces each) whole kernal corn, drained well
1 small onion, finely chopped  
   












  1. mix dry ingredients in a large bowl (not vegetables)
  2. whisk liquid ingredients separately then mix with dry
  3. chop/mince corn as small as desired then drain excess juices
  4. fold in corn and onion
  5. pour into greased 9x13" baking dish
  6. bake at 400F for 25-30 minutes or until a toothpick inserted near the center comes out clean
  7. serve warm
